Millionaire squares

Sweet and salty decadence inspired by my recent trip to San Francisco and the history of the California gold rush.  

I wanted to feel like a millionaire so I made this extremely rich cake with 3 layers of pure pleasure: shortbread, dulce de leche and dark chocolate ganache.

millionaire12Traditionally, this is a VERY sweet desert. Here, I counter the sweetness of this desert with salt, salted peanuts and a very dark chocolate ganache. I think you will be very pleased with the results. I recommend you cut the ingredients in half as this recipe was meant to be shared with a large group of people.

Ingredients

Shortbread

  • 250 g cold butter
  • 350 g bread flour, sifted
  • salt to taste

Dulce de leche

  • 800 g dulce de leche (400 x 2); I couldn’t find any so I bought 2 cans of sweetened condensed milk and boiled it till it reached the right consistency
  • salt to taste
  • optional: peanuts

Chocolate ganache

  • 340 g of chocolate; use dark and/or milk chocolate in your favourite proportions; I’m using 2 part dark (100%) + 1 part milk (56%) chocolates to make a very dark and bitter ganache
  • salt to taste
  • 3 Tbs butter

Procedure

To make the shortbread, cut up the cold butter into chunks and work into the flour, then kneed into a ball.

Line a deep baking pan (XX cm/XX cm) with parchment paper and using your hands/fingers press the dough into the pan. Then prick dough with a fork and bake at 190º C/375º F for about 30 min until browned. Cool to room temperature.

When your dough is cooling prepare chocolate ganache and dulce de leche.

Combine chocolate and butter in a metal bowl and melt over water bath, mixing until it is smooth.

Transfer dulce de leche to a bowl, salt to taste, and heat slightly in a microwave. It will be easier to work with when it is warm.

Once the shortbread has cooled, pour warm dolce de leche over it. Spread peanuts evenly over dulce de leche, then cover with warm chocolate and refrigerate over night.

Cut into squares and serve!
