Don’t waste your Halloween by-product by throwing away pumpkin y-products!
Pumpkin seeds make a quick, delicious and healthy snack. They are rich in protein, omega-3 fats, magnesium, and zinc. Check out this a basic recipe for roasting your pumpkin seeds. The flavour is a matter of preference and you have full control over spicing them up, be that simple salt/pepper or a cracking lime/cayenne zinger!
- guts of 1 small pumpkin
- olive oil or butter
- seasoning: salt, pepper, garlic powder.
Put the pumpkin guts in a strainer, run water and work your fingers through the guts. The seeds are very easily separated from the guts.
Once you have your seeds cleaned spread them on a clean kitchen towel and let dry.
Preheat the oven to 190°C/375°F. Combine pumpkin seeds with your seasoning to your taste.
Spread the seeds on a baking sheet and pop in the oven. The roasting time varies between 60-90 mins so check more frequently pass the 45 min mark.
