A super easy to make and healthy snack in the form of seasonal muffins!
This basic spiced pumpkin muffin recipe gives you a lot of freedom in figuring out what you like, whether it’s more sugar, spice or both! This recipe is not very sweet, but if you like extra sugar in your afternoon snack, you may be interested in either adding extra sugar to the batter or replacing the sugar sprinkle with icing. If you like pumpkin spice, you can vary the amount of spices you add to the muffin batter. If you are up for a experimentation, you can try using a pear instead of an apple.
- 250 g flour
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- spices: 2 tsp cinnamon + 1/4 tsp cardamon + 1/4 tsp ginger
- 200 ml vegetable oil
- 250 g pumpkin puree (make your own pumpkin puree, it’s easy!)
- 120 g brown sugar + extra for sprinkling
- 4 eggs
- 1 apple, grated
Preheat over to 170°C.
Line your muffin pan with paper muffin cups.
In a bowl, combine flour, baking powder and soda with the spices. Set aside.
In a separate bowl, combine oil, eggs, pumpkin puree with sugar and whip until smooth (you don’t want sugar lumps, bump-a-bump).
To the liquid batter add grated apples and mix until well combined.
Add the dry ingredients to the liquid ones and mix until combined.
Spoon the batter into the muffin cups and sprinkle with brown sugar (if you are using icing skip this step and ice after muffins come out of the oven but cool a bit).
Pop in the oven and bake for 15-20 min. Let cool.
